Refrigerator-Batter Bran Muffins

This recipe is part of my hero collection. This recipe represents Capitan Moroni. 
I chose this recipe because it makes enough muffins "to feed an army". 
Moroni is a hero to me because he had a lot of integrity, courage, honor and he was a strong man of God.


Instructions

Cream sugar and coconut oil.
Add the eggs one at at time, mixing after each addition.
In a separate bowl, mix the All Bran, Bran Flakes, flour and salt.

In another bowl, dissolve the baking soda in the buttermilk. I will foam up a lot!


Add dry ingredients mixture alternately with the buttermilk mixture to the original sugar-coconut oil mixture.
You can add raisins, blueberries, chocolate chips, etc. for variety. These muffins are not very sweet!
Bake in muffin cups at 400 F for 15-20 minuets.
Each time you use some of the batter, just spoon out what you need carefully, don't stir it. Keep the dough in an airtight container in the refrigerator.

1 cup shortening (I used coconut oil)

5 cups flour
1 tablespoon salt
3 cups All Bran
2 cups Bran Flakes
