These are also called Soft Ginger Snaps. This recipe is part of my Hero Collection and represents Clara Barton. I chose this recipe because I read that while taking care of wounded soldiers, sometimes Clara and the other nurses would give them fresh, home-baked treats.
Clara Barton is a hero to me because she was selfless, fearless, kind and determined.
Instructions
Add egg and molasses.
Sift dry ingredients into butter mixture.
Mix well.
Roll dough into about 1" balls
Roll balls in sugar.
Put onto a cookie sheet. Don't flatten them! They will spread out as they bake.
Bake at 350 F. for 9-12 minuets.
Molasses Cookies aka Soft Ginger Snaps
Ingredients
1 1/2 sticks butter, softened
1 cup sugar
1 egg
1/4 cup molasses
1/4 teaspoon salt
2 cups flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/2 teaspoon ground cloves
sugar
Cream butter and sugar, add egg and molasses.
Sift dry ingredients into butter mixture.
Combine well and roll dough into about 1'' balls.
Roll balls in the sugar. Put onto cookie sheet. Don't flatten them! They will spread out as they bake.
Bake at 350' for 9-12 minutes. Makes about 4 dozen, but they will be eaten so fast it will seem like a lot less then 48 cookies!
